French-style leather paring knife:
Specification: 2mm thick O1 steel (60+Rockwell) which is hard enough to maintain a fine edge but still easy to sharpen. The cutting edge has a hollow-ground bevel, making the knife easier to hone by hand. The knife has an ergonomic rose wood handle; top-mounted in a tried-and-tested design pioneered by Jeff Peachey, which enables the user to hold the blade at the low angles necessary for leather paring. The knife is mounted on a protective holder for safety and to help preserve the sharp edge.
Unique sharpening guide: A simple strop should maintain the edge for many years but, when the time comes, the knife includes our Green’s Books sharpening guide. This simple widget is for use with a water-fed grinding wheel, allowing the user to re-grind the edge whilst maintaining a consistent radius.
